The more I keep looking at my range finder the more I'm thinking I would like to upgrade it in the future with electronics, etc. What would be a good option for temporarily attaching the ear cap over the range finder so that I can get it off in the future without damaging the helmet in the process?

Also, while I'm talking about the range finder. The M-DSB instructions recommend a bolt for attaching the stalk to the helmet. I'm just not visualizing how this will work. Any bolt with have a substantial head on it and I will have to dish out the ear  piece. Am I missing something in the attachment method?

The best way for attaching the RF ear cap and keep it removable would be to counter sink a couple of magnets into the ear part of the helmet, then glue corresponding magnets to the ear cap.  Check the 8th picture down in this thread to get an idea on how to do this:
